sweet potato gnocchi




This is good but the sweet potato is way too wet and so it took up too much flour and excessive flour is bad for gnocchi. It easily took up 3X to 4X more flour than I was prepared to give it so they are not light-as-a-feather as gnocchi should be, rather they are more like "thud" dough. It just now occurred to me, I wish it had occurred when the thought was useful, that a partial teaspoon of baking powder would lighten the density. 

I do like the orange sauce. Lemon would be good too I betcha. 

* zest of two oranges
* juice of three oranges
* stick of butter
* level teaspoon corn starch shaken with 1/2 cup water
* 1/3 teaspoon cinnamon
* 1/3 teaspoon dry ginger
* 1 tablespoon brown sugar
