eggs with black bean



Black bean dip with bacon and chile pepper was made a long time ago and has been aging gracefully in the refrigerator. I'm tired of seeing it. It's repurposed here for breakfast. Scooped, flattened into a patty with the aid of plastic wrap and oil spray, then coated with Panko breadcrumbs merely pressed into the surface, none of that drench and dredge nonsense which would have resulted in a much thicker coating and a much greater mess. The Panko coating wasn't necessary. It could have accepted cheese or nearly any sauce. As it is, the egg yolk performed the function of a sauce.

I got the idea to use the dip as a platform for breakfast eggs a few days ago but kept putting it off. I cannot imagine why I kept delaying, it turned out to be totally delicious and a very nice break from the usual breakfast fare. The original idea included bacon but when it got right down to it I realized preparing bacon is a drag, and if not a drag then a mess no matter how it's prepared.
