Vietnamese coffee zabaione

Next time I do this will be in a double boiler. I'd prefer the egg yolks to be completely cooked and for the texture to be clooser to mousse. Other than that it's delicious.

6 egg yolks
1/2 cup sugar, which is rather a lot
6 tablespoons espresso
