scalloped potato

That turned into a Hatch chile casserole.















The whole point was to use Hatch chiles that are in plastic bags and currently comprise the bottom floor of my freezer. This might not look like much but I tell you it was absolutely delicious. Heat from the chiles, which turns out to be considerable, they were after all the hot ones, pervades the whole dish. Carmelizing an entire onion first was a good idea, cumen and bruised rosemary added ... something different.

Plus a whole bunch of other vegetable stuff that all together ultimately rendered the potatoes less significant.
