pappardelle shaggy wide pasta

That's Italian for "I'm too lazy to cut narrow noodles". The thing is, I put parmisiano reggiano in the noodles which meant they couldn't be rolled out as thinly. Unable to laminate, as it were, to the usual 6, I perforce stopped at 5, which results in a hearty pasta noodle indeed. Forsaking the cutters that come with the beloved Atlas 150, if only temporarily to take up the chef's knife, which is always fun, results in this shaggy careless untrimmed noodle.


The bolognese was a frozen pre-formed hamburger patty 1/2 hour previous to this, added my favrite things and, viola.    I mean, "Voila!"
