stuffed eggs


I don't know what to call these. I wanted something like a cannelloni but eggs instead of pasta. I aimed to avoid something too like an omelet, although the egg is exactly like an omelet. I could have left out the sour cream for a sturdier filling, it didn't contribute anything noticeable. 

* Italian sausage
* onion
* various bell pepper
* garlic
* Asiago cheese 
* sour cream
* ricotta cheese
* S/P
* mixed capsaicin pepper flakes
* ground coriander seed
* celery salt
* ground fennel seed

Asiago on the egg and in the filling. The scrambled eggs were cooked on one side on low heat setting. Cheese sprinkled on immediately before the egg fully set. The egg disc was removed to a plate and rolled around the filling.
