pasta with meatloaf chunks


This is the held over meatloaf patty from a previous post. It is the sort of meal I prepare when I am totally slumming it. And by slumming, I mean slumming like royalty. It is absolutely delicious. 

The problem with the meatloaf patty is that it was too dry. That was corrected with additional liquid. Naturally.  Fresh mint and basil trimmed from the Aerogarden, because it is there and because it needed trimming, and that is what caused this dish to be tinged with mint and basil. The whole process is so organic.
