miso, chicken aspic soup




Two types of miso, a young and a premium, combined with chicken broth aspic and chicken bits that are the result of roasting chickens in preparation of broth.

I must emphasize again, because it's worth repeating, there is simply no comparison between home-made broth and anything available commercially, no matter how convenient those cartons are and even though they're now available in low-sodium. This has no sodium whatsoever, all the salt is in the miso, and it's a much better form of salt. Plus, roasting chickens and making broth is fun!
